Roasted vegetables are one of the easiest side dishes to throw together, everyone should know how to do this. Some days I’m able to wander through my local farmers market and hand select local produce, other days I grab a bag pre-cut/washed cauliflower and call it what it is. Choose your battles. To up the flavor on them I toss diced root vegetables with maple syrup, cumin, olive oil and salt. High heat is key here.
1 sweet potato diced
4 carrots peeled and diced
4 parsnips peeled and diced
1/4c olive oil
1/4c maple syrup
Directions: Preheat your oven to 475. Toss everything together and throw it on a lined sheet tray. Seriously, it’s that easy. I suggest lining your sheet tray with a silpat or parchment. Cook for 30-40 mins stirring every 10. Because this recipe has maple syrup in it the sugars will caramelized and can burn, stirring will prevent that (I kinda like mine a little burned around the edges though, but maybe that’s just me.)
